2017 CSA Fall December 2nd Turmeric

  • Watercress 8×8
  • Baby Kale 8×8
  • Baby Tatsoi 8×8

  • Rosemary
  • Thyme
  • Chives
  • 2 Butternut Squash
  • 2 Acorn Squash

  • Turmeric*
  • Ginger*

While building from this week’s CSA ingredients, I find all I need to add to this grocery list is a dozen eggs. The greens and herbs can be used to make a quiche, frittata, or homemade pasta as well as enjoyed raw alongside a meal, in a sandwich or even a wrap. Two to three eggs and the butternut, roasted and pureed, becomes the base for a “pumpkin” pie (the flavor and consistency is more of how we dream of for pumpkin pie, try it! Great substitute). Any greens and herbs can also be frozen, in a paste, or chopped to add to later dishes such as lentils, stews, curries and pot pies.

And of course, these are all packed with flavorful aromatic medicinal healing qualities…just check out the antimicrobial activities of herbs and essential oils…blows my mind sometime how we miss that the kitchen cupboard is also the medicine chest.

2017 CSA Summer September 2nd Papaya

  • Ripe Papaya
  • Mint
  • Collard Bunch
  • Oregano Chef Box
  • Chives
  • Baby Tatsoi
  • Yellow Squash
  • Gold Zucchini
  • Tomatoes *from set
  • Lemon Verbena *
  • Green Bell Peppers
  • Anaheim Peppers

Please note: Tomatoes and Lemon Verbena kept out of your box to protect the flavor and longevity of your ingredients this week * *PICK FROM SET*

Of course we will help you with these items, we just don’t want to get distracted and forget your goodies. Think candy, syrup, tea, stuffing, wrap, or other infusion for your lemon verbena. One of my all time favorite uplifting and fortifying ally teas. An essential ingredient in the “Rosey Outlook” line of recipes i use. Whether you go sweet, like a sweet and sour sauce, or savory, like a fish stuffed with leaves, you just cant go wrong with lemon verbena.

Very soon we will start having baby ginger harvest! Woot! Geaux team! Turmeric takes longer to mature, but we will be having continuous harvest throughout this season.

Papaya chutney would be a great way to keep your ripe papaya for weeks to come. If your are not fond of tomato or pickling, per se, maybe make a preserve in your own style. I like to add pumpkin pie spice this time of year, and I don’t mean some imitation flavoring. If you would like to add some FRESH ginger and FRESH turmeric to either a preserve or chuntney or …anything you like, just say the word if it’s not listed/already in the box when you get to the market.

(PS: second harvest of fig on the way..all green)

Papaya in Greenhouse

2017 CSA Summer August 26th

2017 CSA Summer August 26th

  • Ripe Papaya
  • Field Arugula 10×10
  • Rosemary
  • Thyme
  • Sage
  • Yellow Squash
  • Gold Zucchini
  • Tomatoes *from set
  • Cucumber
  • Green Bell Peppers
  • Anaheim Peppers
  • Red Ribbed Sorrel

Papaya pie! Yeah, a little different, but i wanted to share my results: skinned, deseeded and chopped papaya was tossed with juice from 2 limes, !approximately ¾ cup of brown sugar, 2 tbs of honey, 1 ½  tbs of corn starch, plus healthy dashes of cinnamon and vanilla. This was poured into a prepared pie shell and baked on a jelly roll pan at 350F for 30 minutes. I thought it looked a little runny at end time so i dusted the top with some more corn starch, used a spoon to  gently fold that into the papaya filling and baked it for at least another 20 minutes. See the results in the photos and please overlook the tell-tale dusting trail…we thought it turned out very yummy! Maybe you will try it?

Papaya also makes a wonderful chutney for table condiments especially when enjoying a curry or rice pilaf.

Tomatoes are not encased in the box this week, they are “pick from set” and we will be encouraging you to consider canning a few pounds 😉 Rosemary, thyme and sage included to enhance sauce making.
